Kitchens from the fifties and sixties were built around a faucet with two handles on an eight-inch spread and often a separate side sprayer, giving a sink with three or four holes. Most attractive modern faucets are single-hole units. Fitting one to an old sink leaves two or three holes open, and the way to deal with that is a deck plate — an escutcheon that sits under the faucet base and covers the spread — provided the plate that comes with your chosen tap actually spans your spacing. Check that before buying, not after.
The leftover hole is also an opportunity rather than a defect. It is where a soap dispenser, an air gap for a dishwasher, or a dedicated drinking tap for a filter goes.
